I did have a little trouble coloring the image. The alcohol ink kept bleeding out beyond the lines. So, I waited until it dried and used the blender pen to try to push the ink back. There is one place where it didn't work. Even though it bothered me I left it because I didn't want to have to start all over.
Lemon Curd
5 egg yolks
1 cup sugar
1/2 cup lemon juice (freshly squeezed)
1 tsp lemon zest
1/2 cup unsalted butter (cold and cubed)
In medium saucepan add egg yolks, sugar and lemon juice. Whisk until combined.
Place over low heat for 10 minutes stirring occasionally and then bring the heat up some for an additional 5 minutes.
After mixture thickens add lemon zest and stir until combined.
Remove the mixture from the heat.
Add cubed butter one piece at a time, whisking in between each one.
You can pour the lemon curd through a fine mesh strainer to remove any lumps, but I don't do that step. I haven't had a problem with lumps. Pour into a heat proof Jar or container.
Cool to room temperature and place in fridge to chill for at least 2 hours. It will thicken as it cools.
To prevent a film from forming, you can place a piece of plastic wrap directly to top of curd.
This stuff is so yummy. I could just eat it by the spoonful. Have any of you made it before? I am planning on making a lemon curd cake this coming summer sometime.
Hope you enjoyed your visit and hope you can make it back again. Have a wonderful day!
Happy Birthday Scarlett River!!!
