Today I have a card that I wanted to share with you. I have a friend that I have known for years that is very Ill. She is also my niece's grandmother and also attends my Church.
Hoping this card will bring her a smile and to let her know that I am thinking and praying for her.
One day last week I spent the night with my Mom. For supper I decided on making our favorite soup. Which is Spinach Tortellini Soup. So I wanted to share it with you all.
This soup was made in the crockpot. If you don't have one, I'm sure it can be made on the stove. I have always done it in the crockpot.
Spinach Tortellini Soup
Ingredients-
1 bag of frozen cheese Tortellini
1 bag of fresh spinach
2 cans of Italian style diced tomatoes
with basil,garlic & oregano
1 box of Vegetable broth (4 cups)
1 block of cream cheese.
Dice up cream cheese, put all Ingredients into crockpot except cheese tortellini.
Stir, cover with lid and cook on high for 30 minutes. After 30 minutes add tortellini. Stir and turn down heat to low.
Cook for 4 hours and check tortellini to see if done. If not let it go another 30 minutes to an hour.
I usually only make this soup once or twice a year. So when I do make it, it's a treat.
